Apple Cider Loaf cake

  Apples , this is a good way to use up some of those apples in your cupboard. Although I would recommend a more harder apple for the topping. so it will hold its shape.

·        Apple cider it’s a great season for apple cider an a great addition to this recipe for its punch.

·        Butter unsalted is a great far to use it has great flavor. If you use a salted butter, omit the salt from this recipe.

·        Brown sugar adds that caramel flavor

‍ ‍white sugar adds that extra sweetness

Turbinado is a more course cane sugar with slight caramel notes . It adds great texture and flavor with this recipe.

·        Sour cream adds a tang to this cake.

·        Cinnamon, nutmeg, and cardamom these beautiful spices add a warmth of fall to this cake and works so well with the apples & cider.

This recipe makes great muffins!

I would recommend 400 degrees for 6 minutes then down to 350 degrees for 15 minutes or until the toothpick comes out clean of the muffins.

Apple Cider Loaf

Prep time: 20–25 minutes

Bake time: 30–35 minutes total, or until a toothpick inserted in the center comes out clean

Yield: 2 small loaves

Dry Ingredients

·        2 cups all-purpose flour

·        1 teaspoon baking powder

·        ¼ teaspoon baking soda

·        ½ teaspoon salt

·        ½ cup brown sugar

·        ½ cup granulated sugar

·        ¼ teaspoon nutmeg

·        1 teaspoon cinnamon

·        ¼ teaspoon cardamom

Wet Ingredients

·        1 stick butter, at room temperature

·        1 teaspoon vanilla extract

·        ½ cup apple cider

·        2 tablespoons sour cream

·        2 eggs, at room temperature

·        2 cups apples, chopped into a medium dice

Topping

·        2 apple halves, sliced ¼ inch thick

·        ⅓ cup apple cider

·        ½ cup turbinado sugar

Directions

1.      Preheat the oven to 375°F. Spray two small loaf pans with nonstick cooking spray.

2.      Sift the flour, baking powder, baking soda, salt, nutmeg, cinnamon, and cardamom into a mixing bowl. Set aside.

3.      In a separate mixing bowl, cream the butter, brown sugar, and granulated sugar until smooth and well combined.

4.      Add the eggs and vanilla extract, mixing well.

5.      Add the apple cider and mix until combined.

6.      Stir in the sour cream and chopped apples with a spatula until the mixture comes together.

7.      Add the wet mixture to the dry ingredients. Fold with a spatula just until combined.

8.      Divide the batter between the prepared pans, filling each a little more than halfway but no more than three-quarters full.     

Topping

Dip the apple slices in the apple cider, then coat them in turbinado sugar. Arrange 5 slices down the center of each loaf.

Bake at 375°F for 10 minutes. Reduce the oven temperature to 350°F and bake for another 25 minutes, or until a toothpick inserted in the center comes out clean.
