Blueberry Compote
Fresh organic berries from our local farmers market!
I always say buy local, buy fresh! Imagine having fresh bite of warm blueberry compote, with hint of lemon and little bite of sweetness.
Spoon warm over ice cream or pancakes or add to a perfect spread for toast or yogurt.
Key Ingredients
Blueberries; organic is always better as long as they fresh! plump and sweet berries.
fresh L:emons: citrus and sour lemon with a scent of slight floral always adds a hint of freshness and balance to jam or compote.
lemon juice in a bottle is never a good replacement, fresh only.
Sugar in this case granulated sugar adds a wonderful flavor of sheet the this blueberry compote.

Blueberry Compote

cook time: 25 min.
Ingredients
· 1 ½ quarts cleaned blueberries
· 1 cup granulated sugar
· Juice of ½ lemon
· 3 tablespoons water
· 2 teaspoons cornstarch
· 1 teaspoon lemon zest
Directions
1. In a medium saucepan over medium heat, combine the blueberries and 3 tablespoons of water.
2. Add the sugar, lemon juice, and lemon zest. Stir until the ingredients are well combined.
3. Cook for 10 minutes, then lightly mash the berries with a potato masher.
4. In a small bowl, make a slurry by mixing the cornstarch with a little water. Add the slurry to the berries and stir until blended.
5. Continue cooking until the compote begins to thicken.
6. Reduce the heat and simmer for 10 minutes, or until thickened and the cornstarch is fully cooked.
7. Pour the compote into two sterilized jars.
Serving suggestion: This simple, tasty blueberry compote is delicious on buttered bread, biscuits, desserts, or ice cream.
