Spooky Pasta Alfredo with Red Pepper Sauce
Conjure up a frightfully creamy Halloween supper with velvety Alfredo pasta and a smoky red pepper sauce that brings a festive orange glow to every bite.

. 2 orange Bell Peppers
· 1 red bell pepper
· ½ teaspoon TRUFF hot sauce
· 1 tablespoon tomato paste
· ½ teaspoon salt
· 2–3 grinds freshly cracked black pepper
· 1 head roasted garlic
· 2 tablespoons olive oil
· 1 tablespoon butter
You will also need some large bow tie pasta, I found some unique pasta for just such an occasion at World Market Cost Plus or You may be able to find different color pastas in your local grocery store or online.
Directions
Roast the peppers over a medium flame until the skins are blackened and blistered. You can do this on a barbecue grill or directly over a gas-stove flame.
2. Place the hot peppers in a plastic bag, seal it, and let them steam for 5 minutes. This helps tenderize the peppers and loosen the skins.
3. Let the peppers cool enough to handle, then carefully peel away the blistered skins. Gloves are helpful. Remove the seeds and cut the peppers into large slices.
4. To roast the garlic, cut the bottom off a whole head of garlic. Drizzle it with olive oil, season with salt and pepper, wrap it in foil, and bake at 350°F for 20 minutes, or until tender and soft.
5. Place the sliced peppers in a blender. Squeeze in the roasted garlic, add 2 tablespoons olive oil, and blend until smooth.
6. Transfer the purée to a small sauté pan over medium-low heat. Add the tomato paste, salt, black pepper, and butter; stir well. Taste and adjust the seasoning as needed.
7. Stir in the TRUFF hot sauce for a zesty finishing touch. Continue stirring until the sauce is heated through, then serve with your spooky pasta Alfredo.
