Try these light little bites for a shareable Dish!

Eggplant Bites with a light bean hummus & honey

Key Ingredients

Mini Eggplants These mini eggplants are sweeter, and more tender than the bigger eggplants. Such cute little bite size pieces. Found in your local farmers market of grocery store. They are in season July through to October.

Feta cheese is made of sheep’s milk or a mix or sheep and goat. Made in Greece. Has a lovely crumbly texture and a salty taste to it. Great for salads.

Note: I have also used a vegan feta which has such a creamy texture.

Spices like sumac add a tangy lemony flavor to the dish. Paprika has a little smokiness, with salt and pepper for balance of flavor.

Honey adds that sweet to those flavors of salt and smoke, For this dish.

White beans are a small white veggie with a mild creamy texture which adds a nice texture this dish.

Ingredients for the white bean Hummus

1 can of white beans

1 head of garlic

1/3c. olive oil

1/2 a lemon juice

1 tbsp. honey

salt

pepper

3 tbsp. water

Directions:

  • Take a whole garlic head and cut the bottom off. add olive oil and wrap in tin foil. Put into a hot oven of 350 degrees for 35-40 minutes until soft and caramelized.

  • Drain the beans and rinse under water. Give them a good shake to get that water off.

  • in a food processor add the beans and squeeze the whole garlic head into the processor with the beans.

  • add the lemon juice, olive oil, and honey. Blitze the processor until smooth. You may add a little water for the right texture.

  • add salt and pepper to taste.

  • after you taste the hummus spread a nice amount on the bottom of a serving plate. Ready for the egg plants.

Love white bean hummus, I find it lighter than regular chick pea hummus. Although I love both!

Eggplant Bites with a light bean hummus & honey

Prep time: 20 min.

grill time 10-12 min.

This is a very shareable dish!

Ingredients for the eggplants.

1 1/2 quarts of baby egg plants

(which is 5-10 mini eggplants)

olive oil for drizzling

½ teaspoon of salt

2 rounds of cracked pepper

1 teaspoon of Sumac

½ teaspoon of paprika

½ teaspoon of garlic salt

honey for drizzling

crumbly feta cheese

Directions:

Spray the grill with non-stick spray

Turn the grill onto a med-hi heat.

Clean and cut the mini eggplants in half

drizzle olive oil over and brush into the eggplants.

sprinkle the spices over top, then grill for 10-12 minutes face down until tender.

Grill marks are always good, especially when serving to you’re guests.

When the eggplants are grilled ready. take them off of the grill. place them onto the plate of bean hummus, grilled side up.

Sprinkle some extra spices over top with fresh parsley, feta, and a drizzle of honey.
