Green Pea Soup

Green Pea Soup

Cook time: 10-15 min.

Prep time- 10 min.

Serves: 2

Ingredients

3 cups of frozen green peas

4 cups of chicken or veg stock

2 large cups of baby spinach

1/2c. fresh basil

3 sprigs of fresh thyme

1 small white onion (small dice)

1 lg. garlic clove

2 tbsp. honey

2 tbsp. olive oil

1 tbsp. butter

1/2cup pancetta or bacon chopped

½ cup reg package of snap peas(shelled)

1/3.c sour cream+ extra for plating

Pinch of salt & Pepper

1 blender

Directions:

In a large fry pan on medium heat add 2 tbsp. pancetta pieces to the  butter, and finely diced white onion.

(save the rest of the pancetta to fry up for a topping to the pea soup.)

Stir for 10 minutes until translucent. The pancetta should render enough to add flavor to the pan for the peas.

Add grated garlic clove and 3 cups of frozen peas to the bacon and onions.

Add 2 bay leaves, thyme sprigs, Saute until the peas are warmed through.

Add the spinach and basil to the peas and sauté until the greens are just wilted.

Turn off the stove top and (make sure you take out any bay leaves and thyme stems out of the pea mixture before blending)

Take the pea mixture and add them to the blender.

Add 4 cups of chicken or veggie stock to the blender. Add 2 tbsp. of honey, add 2 tbsp. olive oil.

Blend until smooth.

Taste any extra salt and pepper that is needed.

Pour soup into a medium saucepan and warm through, On medium, low heat. It does tend to splat so stir continuously.

Stir 1/3c. sour cream into the soup, this adds a great tanginess to the soup. Not to mention a beautiful light green spring color to the soup.

Always taste to see if there is anything needed.

Remember to fry up the rest of the pancetta and drain onto a paper towel.

When you serve up the soup add a small spoon of sour cream, top with some pancetta and some of the peas from the snap peas that you have and top them onto the pea soup.

With a fresh basil leaf.

Basil is a beautiful herb with natural herby flavors of a little clove and can be very versatile in different dishes.

Pancetta adds a beautiful smokiness and a little salt to this dish.

Honey- honey adds a sweetness to the pea soup and balances the flavor of salt  that has been added to the soup with the pancetta.
