Ingredients:
sandwich:
1 loaf of rustic Italian bread
1-2 lbs. prosciutto
1 bag of baby arugula
1 garlic clove peeled with one end sliced off
1/4c. olive oil
cracked pepper
1 6-8 ounce wheel of brie or camembert cheese
Blackberry Balsamic Vinaigrette dressing(recipe below)
To be made ahead of the sandwich, so you have time to refrigerate.
Directions:
cut the whole loaf of bread in half lengthwise
brush cut side of the bread with olive oil, then rub the open end of garlic all over the open part of the bread.
slice the cheese into ½ in slices lay to sliced brie onto the bread diagonally.
Toast in the oven at 350 just until the bread is toasty and the cheese has melted.(10 min.)
take the toasted sandwich out the oven and over top of the cheese add arugula, prosciutto, then top with the vinaigrette. The great thing about this sandwich is its very shareable.
Note: you can do a smaller version on a crusty bun for one.
Blackberry balsamic vinaigrette
1 pint of blackberries
2 tbsp. honey
1/2c. granulated sugar
1/4c. balsamic vinegar
squeeze of (fresh)lemon juice
1 tsp. cornstarch
splash of water
Directions: Heat stove top to medium heat. In a medium saucepan add the blackberries.
Add honey, sugar and a splash of water. wait for them to soften, then mash the berries.
add cornstarch slurry
add the balsamic vinegar
Render the berry mixture down until it looks like jam, the cornstarch will start to thicken the berry mixture.
taste for good measure,
strain through a fine strainer and push the jam through with the bottom of a spoon.
until you end up with a beautiful refined vinaigrette.
refrigerate the vinaigrette until cool.
drizzle over the prosciutto, arugula and cheese.

Brie Cheese
Brie cheese has a beautiful creamy texture, especially when melted. Also is a great balance for salt and sweet for this sandwich.
Prosciutto
Is a dry cured Italian ham. It is enjoyed on it’s own with fruit and cheese tray, and in risotto, pasta, and salad dishes.
This will add a beautiful soft salty taste to the brie and the blackberry dressing.
Blackberries
are plump, dark and juicy. Their sweet and tart flavor will add to this rustic sandwich.
Balsamic Vinegar
a dark rich tangy vinegar that is aged and fermented for many years. Made with cooked grapes. has a beautiful tangy flavor and great to add to dressings, savory desserts and vinaigrettes.
added to the blackberries can make a savory sweet vinaigrette for the sandwich.
Baby Arugula
Has a milder bite than later-harvested arugula and still a peppery flavor. It adds a light crunch and peppery kick to the sandwich.

The taste of melty brie on some rustic bread with tasty proscutto, with crunchy peppery arugula and a touch of blackberry dressing. It all taste so well together.
