Key Ingredients
Peaches have soft fuzzy skin with a juicy soft inside. They are also a part of the rose family. Their taste is soft and subtle with a delicate flavor of peach. Like most fruits, the peach has natural sugars in them, they especially come out when left to soften at room temp. Peaches grill very well and brings their natural sugars out.
marscapone is an italian cream cheese tastes lighter than regular cream cheese.
whipping cream
Using fresh whipped topping with the marscapone. Its rich, decadent and fluffy.
Honey grilled Peaches with mascarpone cream
Prep time: 15 min.
Bake time: 12-15 min. (350-degree oven)
This dish is for Two
Ingredients:
2 ripened peaches
3 tbsp. honey
2 tbsp. butter
2 tbsp. brown sugar
Pinch of cinnamon
Directions:
To prepare a small pan for the honey butter mixture, you will need 3 tbsp. honey, 2 tbsp. butter and 2 tbsp. brown sugar and a pinch of cinnamon. Turn on low –med heat until the pot starts to bubble up at the sides. Make sure you stir the mixture together then take off the heat. It should only take 3-5 minutes for this. just until the sugar melts into the butter and honey.
You can grill the peaches on the babeque or a grill top inside is fine too. I like to give the grill top a some non-stick spray. Heat up the grill first. You want the grill hot so the peaches sear, but you do not want to burn them. I try to keep it on a medium heat.
Place the peach halves onto the grill, skin side up meaty part of the peach down. Allow the peaches to grill for 5-8 minutes.
when the peaches are nice and grilled turn them over and baste with the honey butter a few times over .
set them aside when they are finished on the grill. Serve them up right away with the marscapone cream whipped topping and crumble top.
Crumble topping
1/3c. dried coconut chips
1/3c. unsalted almonds
3 tbsp. almond flour
2 tbsp. sugar
1 tbsp. softened butter
In a food chopper at the coconut chips, almonds, almond flour and sugar until they turn into a crumbly mixture.
Add a little butter to a pan and melt then add the crumle topping to toaste the crumbs for a minute so they have a little crunch.
Whipped topping
1/4c mascarpone cheese
1 c. whipping cream
1-2 tbsp. icing sugar(optional)
1 tsp. vanilla
to a mixing bowl add the softened mascarpone and vanilla extract, whip until smooth. Add the fresh whipping cream, icing sugar and continue beating until soft peaks are formed.
Time to finish plating! Add some of your whipped topping to the top of the cooled peaches with a sprinkling of the crumble mixture over top.
Adding some honey over top would be fabulous at this point!

Note:
For those not wanting to use the heavier creams, you can use a lighter whip cream like cool whip I have even seen a lite coconut whip.
Marscapone is a good stablizer for the whipped cream.
