Cozy up to the flavors of fall with these irresistible oatmeal cookie sandwiches. Warmly spiced, chewy oatmeal cookies are layered with silky cinnamon buttercream and a sweet-tart apple filling, creating a comforting treat that tastes like autumn in every bite.

Oatmeal Cookies

Prep time: 15 minutes

Bake: 350°F for 8-10 minutes

Makes: 12

Before you begin, bring all dairy ingredients to room temperature. Preheat the oven to 350°F. Line baking sheets with parchment paper or lightly coat them with cooking spray.

Ingredients

·        1 1/4 cups of all-purpose flour

·        1 cup of hearty oats

·        ½ teaspoon baking soda

·        ½ teaspoon baking powder

·        1/2 teaspoon of salt

·        1 teaspoon cinnamon

·        1/2 teaspoon nutmeg

·        1 stick butter, softened

·         ½ cups light brown sugar

·        ½ cup granulated sugar

·        1 large egg

·        1 teaspoon vanilla extract

·        1 tablespoon molasses

Instructions

1.       Whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.

2.       In a separate bowl, beat the softened butter, brown sugar, and granulated sugar until combined. Beat in the eggs and vanilla and molasses.

3.       Add the dry ingredients to the wet ingredients and mix ingredients with mixer until combined.

4.       With a medium cookie scoop, scoop the cookie dough into the scoop and make sure the bottom of the scoop is level. So, it makes a perfect shape cookie.

5.       Drop the dough onto the prepared baking sheets. With damp fingers, gently flatten the tops. Keep the cookies evenly sized.

Refrigerate for 30 minutes- so they hold their shape well

6.       Bake for 8 minutes, or until set and lightly golden and a little more golden at the edges.

7.     Cool completely on a wire rack, then match the cookies into pairs of similar sizes.

 Apple Filling

Prep time: 10 minutes

Cook time: 10 minutes

Ingredients

·        2 green apples, diced (small)

·        3/4 cup brown sugar

·        Pinch of salt

·        1/2 teaspoon cinnamon

·        Pinch of nutmeg

·        1/2 stick butter

Instructions

Melt the butter in a sauté pan over medium heat. Add the diced apples, brown sugar, salt, cinnamon, and nutmeg. Cook, stirring often, until the apples are tender and the butter and sugar form a soft, caramel-like sauce. Transfer the compote to a small bowl and let it cool completely.

Cinnamon Buttercream Icing

Ingredients

·        2 cups confectioners’ sugar

·        2 tablespoons of cream cheese softened

·        1/2 stick butter, softened

·        2 tablespoons cream, plus more as needed

·        1/2 teaspoon cinnamon

·        Pinch of salt

Instructions

Beat the confectioners’ sugar, softened butter, cream cheese, cream, and cinnamon until smooth and fluffy. Add a little more cream, if needed, to reach a spreadable consistency.

Assemble the Cookie Sandwiches

1.       Place one oatmeal cookie flat-side up. Pipe or spread cinnamon buttercream around the edge, leaving a small space in the center.

2.       Spoon a small amount of cooled apple compote into the center.

3.       Top with a matching oatmeal cookie and press gently to form a sandwich. Repeat with the remaining cookies, then serve and enjoy.
