*Grill French bread cut on a diagonal with a little olive oil.

*add a slice of cheddar and melt it just a little

* top with really good roast beef and a spoon of Onion Jam.

*You can use Gruyere, goat cheese, ricotta even cream cheese instead of the Irish cheddar. Any kind of creamy cheese is good!

Ingredients

·        2 medium white onions, finely chopped

·        2 tbsp olive oil

·        ½ cup prunes, chopped

·        1 garlic clove, minced

·        ¼ tsp salt

·        ½ tsp black pepper

·        2 tbsp honey or brown sugar

·        1 tbsp fresh thyme

Directions

1.       Heat the olive oil in a saucepan over medium-high heat.

2.       Add the chopped onions, chopped prunes, and minced garlic. Stir to combine.

3.       Cook the mixture until the onions soften and the color begins to deepen.

4.       Stir in the honey or brown sugar, salt, and pepper.

5.       Continue cooking until the onion mixture turns a rich brown color and thickens to a jam-like texture. Add a splash of water if needed to help the ingredients cook down evenly.

6.       Stir in the fresh thyme during the last few minutes of cooking.

7.       Remove from heat and let cool. Store in Jam jars.

This onion jam is a flavorful way to dress up meat, especially for onion lovers. The fruit adds natural sweetness, while the fresh thyme gives it a bright, savory finish.
