Salmon Lox Is a rich salty cured salmon usually taken from the fish’s belly. Is cured with salt and sugar, herbs. Is so good with creme fraiche or cream cheese and herbs!!
watercress is a leafy green found ground in and out of water. They are usually found in shallow ditches in parts of Canada, England and in the United States.
Capers They are savory, lemony salty little bundles of brininess all packed into one little pea size pearl. They are cured in salt or pickled. and come from the Mediterranean. They go great with fish, lemony dishes and dressings! delish.
Creme Fraiche is similar to sour cream and can be used in place of sour cream but without the tanginess.
is delicious and a little more upscale in flavor and richness.
Watermelon radishes have a sweet less peppery taste than the regular radish. They are beautiful bright and vibrant in a summer dish!
Open Faced Lox & creme fraiche sandwich

Servings for two
Ingredients
1 package of creme fraiche
1 package of salmon Lox
1 bunch of fresh watercress
1 bunch of fresh dill
1 Parisian sliced cucumber sliced thinly
2 watermelon radishes sliced thinly
capers
flaked sea salt
cracked pepper
black sesame seeds
2 pieces of thinly sliced specialty bread(sunflower seed or rye bread)
Directions
lay out 1-2 pieces of bread
spread creme fraiche over the bread
add thinly sliced cucumbers down the middle of the bread
add 3 pieces of smoked salmon, gently folding each piece so it falls nicely on to the bread
add the thinly sliced water melon radish down the side of the bread
cover with thinly sliced red onions, capers and a few sprigs of watercress. (which you will find at your local grocers in the fresh greens section).
*watercress is usually found growing in the water, and can be found growing in soil. Up north my father would pick it out of the ditches. It has a more peppery, more pungent flavor.
