Peach Burrata Salad for Two
The key ingredients
Baby spinach- adds a nice soft crunch and is a small mouth bite. It adds nutrition and is a great pop of green.
Basil-has a beautiful sweet scent and adds a herby pop of flavor to the salad.
Peaches-when in season add a soft summery flavor to this dish. adds great texture and sweet essence of summer.
Tomatoes add a nice mixture and color to the salad. Tomatoes can add a subtle bounty of flavor.
Prosciutto-is delicious on it’s own. But when fried in a little olive oil it can have a crunchy, salty taste to the salad. to balance the sweet.
Burrata- just adds a creamy texture to balance off the rest of the salad.
Notes:
For this recipe you can replace peaches withnectorines, especially if you do not like the skin on the peaches. I find it a nice alternative.Strawberries are a great replacement also.
Peach Burrata Salad for Two
· Prep time: 20 minutes
· Servings: 2
Ingredients
2 ripe peaches (or nectarines)
4 slices of prosciutto
· 1 cup fresh basil leaves
· 2 cups baby spinach
· 2 large red tomatoes, cut into wedges (heirloom tomatoes work well too)
· 2 balls of burrata
Dressing
· 1/4 cup olive oil
· 1 tablespoon strained peach jam
· 2 tablespoons honey
· 1 teaspoon Dijon mustard
· 2 tablespoons champagne vinegar
· Pinch of salt and black pepper, to taste
· Whisk all dressing ingredients together until smooth.
Directions
· Taste the dressing and adjust the seasoning as needed for balance.
· Arrange the salad on a decorative plate or serving platter.
· Start with the baby spinach and basil leaves, then layer on the tomato wedges and peach wedges.
· Tear the burrata into bite-size pieces and tuck them throughout the salad.
· In a small skillet, fry the prosciutto in a little olive oil for 1 to 2 minutes, or until crisp. Transfer it to a paper towel-lined plate to drain.
· Break the prosciutto into pieces and scatter it over the salad.
· Drizzle the salad with the dressing just before serving.
Serving Suggestions
Serve this salad with warm crusty bread or crostini to soak up the creamy burrata and sweet vinaigrette. It also pairs beautifully with grilled chicken, salmon, or a chilled glass of white wine for a light summer meal. If you are serving guests, arrange it on a large platter and finish with extra basil leaves and freshly cracked black pepper for an elegant presentation.
