Ingredients

10-12 medium shrimp

(florida pink)

2 ounces of your favorite linguini

2 tbsp. butter

2 tbsp. olive oil

Directions

In a medium pot of salted boiling hot water add the linguini. I put enough for two servings in this recipe but you can add 2 more ounces if serving 4. Boil until pasta is aldente. while you are waiting for the pasta to cook; work on the shrimp. they really do not take long at all.

In a medium fry pan add the butter and a splash of olive oil and allow it to heat up. Add the already cleaned and devained shrimp to the pan, add salt and pepper with a little grated parmesan.This should take 1-2 minutes per side. just until pink. Cook on the other side until pink. take the shrimp out of the hot pan right away so they do not over cook. They will be rubbery if you overcook the shrimp.

when you pull the pasta out of the water(aldente please)-add the pasta to a fry pan with a little butter, add the pesto and stir it into the pasta.

before you serve this dish add a drizzle of extra virgin olive oil, lemon zest, grated parmesan. Top with the shrimp, with a little basil Leaf.

Pesto

1c. of fresh basil

1c. fresh arugula

1 large garlic clove

1/3c. walnuts

1 tbsp. lemon zest

good olive olive oil

1/3c. grated parmesan cheese

1 pinch of dried chili peppers(optional)

2 tbsp. fresh lemon juice

salt & pepper to taste

1 tbsp. honey

in a small food processer add basil, arugula,garlic clove,walnuts, parmesan cheese, lemon juice and honey. start blending all of the ingredients together slowly adding your olive oil until it is the right consistancy for you.

Remember to taste for salt and pepper. The consistancy should be smooth and emolsified.

Put aside and add to the linguini according the the recipe above.

Florida Pink shrimp: This is a sweet tender shrimp that’s caught wild in the keys. Also known for their delicate flavor and brightness. They have a more delicate flavor than the white shrimp.

Linguini is a pasta that is long narrow and slightly flat. Is a nice pasta that goes with sauces like oil and garlic based sauces. Linguini can also take on some rich sauces , goes well with seafood.

I thought my pesto would go nicely to this beautiful pasta.
