Ingredients
· 2 slices crusty rustic bread
· 3 tablespoons whipped feta (recipe below)
· Smoked salmon, 2–3 slices
· 3–4 slices vine-ripened tomato
· 4 thin slices red onion
· 1 tablespoon capers
· 2–3 sprigs fresh dill
· Fresh alfalfa sprouts
Assembly
1. Toast the two slices of rustic bread.
2. Spread whipped feta on one slice of toasted bread.
3. Layer on the tomato slices and red onion.
4. Drape 2–3 slices of smoked salmon over the vegetables.
5. Sprinkle capers over the smoked salmon.
6. Top with fresh dill and alfalfa sprouts.
7. Spread a little more whipped feta on the second slice of toasted bread.
8. Place the second slice on top to finish the sandwich.
