Spooky Pasta Alfredo with Red Pepper Sauce
Conjure up a frightfully creamy Halloween supper with velvety Alfredo pasta and a smoky red pepper sauce that brings a festive orange glow to every bite.
Key ingredients for red pepper sauce
Red and Orange peppers; they are great for their peppery sweet flavors and give a good bright color
Truff hot sauce; is a really tasteful hot sauce, it has wonderful flavor to add a little heat to this red pepper sauce.
Tomato Paste; adds that little bit of tomato flavor to this sauce.
Always have good olive oil, added with the butter it adds a creamy texture to this sauce.
Fettuccine Sauce

Ingredients
· ½ cup freshly grated Parmesan cheese
· ½ cup shredded mozzarella cheese
· 2 cups whole milk
· 2 tablespoons flour
· ½ stick butter
· 2 cloves garlic, grated
· 1 teaspoon dried oregano
· 2 tablespoons finely chopped parsley
· 2 turns freshly cracked black pepper
· Salt, to taste
Directions
1. In a wide saucepan, melt the butter over low to medium heat. Add the grated garlic and sauté for about 1 minute, until fragrant.
2. Whisk in the flour and cook briefly to remove the raw flour taste.
3. Gradually add the milk, whisking continuously. Cook over low to medium heat until the mixture thickens.
4. Add the Parmesan, mozzarella, oregano, and cracked pepper. Whisk until the cheeses melt and the sauce is smooth and thick.
5. Taste and add salt only if needed, since the cheeses may already be salty.
6. To serve, add one portion of cooked pasta to a small sauté pan with a spoonful of sauce. Toss to coat, then finish with extra grated Parmesan and chopped parsley.

Red Pepper Sauce
. 2 orange Bell Peppers
· 1 red bell pepper
· ½ teaspoon TRUFF hot sauce
· 1 tablespoon tomato paste
· ½ teaspoon salt
· 2–3 grinds freshly cracked black pepper
· 1 head roasted garlic
· 2 tablespoons olive oil
· 1 tablespoon butter
You will also need some large bow tie pasta, I found some unique pasta for just such an occasion at World Market Cost Plus or You may be able to find different color pastas in your local grocery store or online.
Directions
Roast the peppers over a medium flame until the skins are blackened and blistered. You can do this on a barbecue grill or directly over a gas-stove flame.
2. Place the hot peppers in a plastic bag, seal it, and let them steam for 5 minutes. This helps tenderize the peppers and loosen the skins.
3. Let the peppers cool enough to handle, then carefully peel away the blistered skins. Gloves are helpful. Remove the seeds and cut the peppers into large slices.
4. To roast the garlic, cut the bottom off a whole head of garlic. Drizzle it with olive oil, season with salt and pepper, wrap it in foil, and bake at 350°F for 20 minutes, or until tender and soft.
5. Place the sliced peppers in a blender. Squeeze in the roasted garlic, add 2 tablespoons olive oil, and blend until smooth.
6. Transfer the purée to a small sauté pan over medium-low heat. Add the tomato paste, salt, black pepper, and butter; stir well. Taste and adjust the seasoning as needed.
7. Stir in the TRUFF hot sauce for a zesty finishing touch. Continue stirring until the sauce is heated through, then serve 1-2 spoons on the side of you’re Spooky Alfredo.

Really good shredded mozzarella, and fresh parmesan to add that nutty cheesy flavor to this sauce.
Oregano fresh or dried adds that Italian flavor to the sauce
fresh Italian Parsley adds that herby flavor and color to finishing off this beautiful white sauce.
Butter adds a beautiful shininess and flavor to the sauce. Preferably unsalted. You can add salt after to your taste.
